Love For Baking

Growing up, I loved baking for friends and family and was often found in the kitchen gaining knowledge from my grandma and aunts. My first restaurant job was as a dishwasher, where I was exposed to gourmet food and restaurant life.

In 2018 I graduated from South Seattle College with an Associate’s of Applied Science degree in Pastry and Specialty Baking. The program focused on breads, chocolates, cakes, custards, and French pastries. I found the professional pastry field welcoming, detailed, creative, with the need for extremely high standards.

My Journey

My first job out of college was under a world-renowned chocolatier in Bellevue, Washington. Where I gained real-world experience, learned the importance of using high-quality ingredients, and how to treat people with respect. I then got a job in Redmond, Washington at Facebook’s pastry department.

After coming back to Ellensburg where my family lives, I worked at a hotel restaurant in downtown Ellensburg for three years as the pastry chef. I enjoyed meeting the community, curating fancy-plated desserts, and working closely with the executive chef.

I now work at Kittitas Cafe as a morning baker, while simultaneously owning my own business. I love learning about people, business, and food, and feel blessed to do it here in Ellensburg! The backbone of Joey’s Patisserie is people and we couldn’t do it without our amazing community who supports and encourages each other along the way.
